The village now has 100 households making pork paste with the total output of about 50 kilos per household per day. On Tet holiday, the output increases by two to three times. In order to make the tasty pork paste, choosing ingredients, mixture of ingredients, cleaning equipment and machine must be careful.

We visit the pork paste facilities of Mr. Nguyen Ba Thuy as the whole products had purchased by the collective kitchens and business facilities. Mr. Thuy said that his family was transferred the profession, so he always wanted to keep and develop the profession. In order to make tasty pork paste, choosing good meat is the most important. Fish sauce must be fine and ensure the food hygiene and safety. The mixture ratio of each pork paste must be calculated appropriately so that the output will be sweet, aromatic and soft. Now many machines are put into production to raise the productivity, quality and consistency of products. In order to ensure the food hygiene and safety, the production is carried out in the close room to avoid dusts and pests and all machines and equipment for production is made of stainless steel. After the production process finishes, all the production zone and related machines are cleaned up. Now my family produces from 20 kilos to 30 kilos of pork paste.

Mr. Do Van Chuyen's family is a household doing the profession in Trai Trang village. Every day, his family gets up at 3am to start a new working day. While his wife buys meat, Mr. Chuyen wipes all kitchens utensils and prepares ingredients for pork paste batches. At 6 am, the hot aromatic pork paste rolls are ready to serve customers. "The pork paste of our family in particular and of our craft village in general appear in many places and are bought to foreign countries" he added. His biggest wish is to build and protect the collective trademark of Trai Trang pork paste so that the craft village will increasingly thrives.

In order to assist Trai Trang village to develop the trademark of "Trai Trang pork paste" in 2021, the People's Committee decides to implement the project of creating, managing and developing the trademark of "Trai Trang pork paste" for pork paste products of Yen My district, Hung Yen province.

After 1 year of implementation, now the trademark of "Trai Trang pork paste" is approved by the Yen My farmer association. After discussing, craftsmen decided to build the trademark logo and register the labels and barcodes for manufacturing facilities. Mr. Nguyen Van Phuong, Chairman of Farmer Association said: "Now we are in rush to compete procedures to officially get the certificate of collective trademark protection. In order to advertise the trademark of the craft village, the town has installed the billboard of logo and name of the trademark as registered. In addition we built up the regulations on quality criteria, manufacturing process and rules of trademark management and use; educate the producers to make high quality products ensuring food hygiene and safety; renew the forms and vary the types so that production of pork paste in Trai Trang in particular and Yen My in general will increasingly develop.
