The Red River flows through Hung Yen territory with a length of about 57 kms, which not only has a favorable condition for the development of agriculture, industry, daily routine, waterway transport but also provides abundant aquatic resources such as shrimp, crab and fish. Sardines
Sardines migrate from the sea to rivers to spawn. Spring, especially through the full moon of January, is the time when the fish flock back to the rivers. The fish has tiny silvery white scales, flat body, many small bones but a lot of meat. The flesh of sardines is sweet and fragrant, and the fish roe is even more delicious due to its irresistible aroma. To fully enjoy the deliciousness and nutrition of sardines, it can be processed in many ways such as frying, grilling and grill fished. Whether sardines are baked, fried or making into grilled fish, it must be preliminarily cleaned, marinated with spices, garlic, ginger, lemongrass, turmeric. Cranoglanis bouderius is a species of armorhead catfish . This fish is fleshy, has less bones, the flesh is soft and sweet. In order to cook the best dish with this fish, the ingredients include peeled green bananas, pork belly, turmeric, tomatoes, fermented rice, shiso and other seasoning such as fish sauce, salt, broth mix, pepper, hot chili. After preliminary processing, fish is cut into pieces and fried. The prok belly is stir fried and put in with banana and fish, and marinated with fermented rice and seasoning. Then pour water into the pot and cook with small heat until all ingredients are cooked and soft. In addition to braised fish with banana and fermented rice, it can be cooked with pickles or tomatoes.
Parachela oxygastroides ,
Parachela oxygastroides is a species with small body, silver white, flattened on both sides, 20mm long and 20g in weight. In March and April, the fish has much fish roe. This fish is an ordinary species but its flesh is delicious and able to be cooked into various dishes such as fish soup, grilled chopped fish, fish cooked with banana, fried fish or cooked with pickles. This type of fish is favored by Hung Yen residents because is cheap, yet delicious. This fish is often used to make grilled chopped fish because it's small and soft. It is ground with pork and herbs and then fried, cooked with tomatoes or vegetables.
